Ingredients needed to make red chili beef jerky

Main Ingredients for Making Batokok Beef Jerky:

  • 800 gr beef
  • 15 gr tamarind
  • 2 lbs of turmeric leaves
  • 7 lbs lime leaves
  • 5 bay leaves
  • 1/2 tsp turmeric, puree
  • 1/2 tsp galangal, puree
  • 1 tsp garlic, puree
  • salt to taste
  • brown sugar to taste

Red Chili Sauce Ingredients For Jerky:

  • 200 gr large red chili, coarsely ground
  • 50 g red onion
  • 100 gr curly red chili, coarsely ground
  • salt to taste
  • sugar to taste

Stir-fry Ingredients and Seasonings For Jerky:

  • 1 scallion, cut lengthwise
  • 1 tomato, cut
  • 1 clove of garlic, puree
  • 2 lime leaves, squeezed
  • 1 bay leaf

How to Process Beef:

  1. The first step that can be done is to first slice the beef that has been prepared in a thin elongated shape. In addition, please cut the meat against the direction of the meat fiber, this is because cutting the meat in the direction of the fiber will make the meat crumble and difficult to flatten.
  2. After that, put the meat into a large container or bowl.
  3. Prepare a placemat, take a meat mallet and beat the meat to form a flat until the meat fibers become more flat.
  4. Wash the meat after beating with clean water and make sure if the dirt on the meat can be cleaned thoroughly. Then remove and set aside for a while.

How to Cook Red Chili Batok Jerky:

  1. Prepare a pan, add water and put the meat that has been cut into it then boil the meat while adding all the beef jerky ingredients.
  2. Boil the meat for about an hour so that the spices soak into the jerky evenly and the meat becomes more tender and cooked.
  3. Once cooked, remove the meat and drain the water then place the meat in a small container or large bowl and set aside for a while before we make the red chili sauce.

How to make red chili sauce:

  1. First, boil 3 liters of water in a saucepan, add all the ingredients along with the boiled meat.
  2. And re-boil the meat until it is cooked and becomes softer in texture for about 1 hour. After that, remove and drain the meat and let it cool for a while.
  3. While waiting for the meat to cool down, coarsely grind the shallots along with the red chilies and salt. Set aside.
  4. Take the meat and mash it until the surface of the meat becomes flatter.
  5. Then fry the meat in a frying pan with oil until cooked and evenly distributed, set aside.
  6. Saute the bay leaf along with lime, garlic, scallion and tomato until it smells delicious, add the spices and taste until just right. Then add the fried meat and stir until the spices are absorbed.
